ANDHRA CHICKEN PULAO

INGREDIENTS:

  • Cardamom piece : 4
  • Chicken Big pieces : 500grams
  • Basmathi rice : 2 cups
  • Water : 4 cups
  • chilli powder : 2 tsp
  • cinnamon : 1inch piece
  • Cloves : 4
  • coriander leaves : a bunch
  • coriander seeds : 2 tbsp
  • curry leaves : 20(2 sprigs)
  • Fresh coconut : ½ cup
  • fried cashewnuts : 10
  • shahjeera : 2 tsp
  • star anise : 1
  • ghee & oil : ¼ cup
  • ginger garlic paste : 2 tbsp
  • green chillies : 4
  • onion : 2
  • poppy seeds : 2 tbsp
  • salt : according to taste
  • turmeric : 1 tbsp
  • yoghurt : ¾ cup

Method :

  • Heat a pan and dry roast cardamom, Cinnamon,Cloves, add Corriander seeds till they are roasted but do not burn and remove from flame.
  • Dry roast poppy seeds and keep them aside.
  • Powder the above roasted ingredients together
  • Grind coconut and water to a smooth paste.
  • Now add the powdered masala to coconut paste and blend together
  • Wash chicken and Marinate chicken with Chilli powder, salt, half of curry leaves, one sliced onion and curd.
  • In a Vessel add Ghee and Oil ,when heated add cardamom,cloves and cinnamon,bayleaf,shahjeera,star anise.
  • Add onion slices and curry leaves fry till transparent.
  • Add turmeric, salt, sliced green chillies,ginger garlic paste and fry till the raw smell disappears.
  • Now add the masala paste and fry for a minute
  • Now add marinated chicken and cook till the Chicken is 60% done(for about 15-20mins)
  • Now add rice over the chicken, add water and stir
  • Close the lid and cook all the water is absorbed
  • Garnish with fried cashews and curry leaves.
  • Turn off the flame and keep it like that for five more minutes
  • Andhra chicken pulao is ready
  • Serve hot with raitha and enjoy
