BEERAKAYA PAALU - RIDGE GOURD CURRY WITH MILK

INGREDIENTS:

  • Oil :1 tablespoon
  • Mustard seeds : ½ teaspoon
  • Cumin seeds : 1 tea spoon
  • Curry leaves : 1 sprig
  • Turmeric : ¼ teaspoon
  • Salt : as desired
  • Red chilly powder: 1 teaspoon
  • Onion : 1 medium sized(chop finely)
  • Ridge guard : 1 (peel and chop finely)
  • Milk : 1/4 cup
  • Coriander : little

PROCEDURE:

  • Heat oil in a pan
  • Add mustard seeds, cumin seeds and curry leaves
  • When they splutter add turmeric, onions and stir
  • After a minute add ridge guard pieces and stir
  • Add salt and close the lid
  • Stir occasionally
  • When the Ridge guard pieces gets cooked till soft add red chili powder and stir
  • Add warm milk and stir
  • Switch off the stove within few seconds otherwise the milk will curdle
  • Garnish with coriander and serve with hot rice or rotis
