BOTTLE GOURD CURRY WITH MILK-ANDHRA STYLE

INGREDIENTS:

  • Bottle guard : 1 medium sized
  • Onion : 1 medium sized
  • Green chillies : 2
  • Curry leaves : 1 sprig(8-10)
  • Ginger-garlic paste : 2 teaspoons
  • Oil : 2 tablespoons
  • Turmeric : a pinch
  • Mustard seeds : 1 teaspoon
  • Cumin seeds : 2 teaspoons
  • Salt : as needed
  • Warm milk : ¼ cup
  • Coriander powder : 2 teaspoons
  • Garam masala : 1teaspoon

PREPERATION:

  • Chop onion,Bottle guard into small pieces
  • Slit green chillies
  • Keep ginger-garlic paste ready

METHOD :

  • Heat oil in a pan
  • Add mustard seeds,cumin seeds.when they splutter add curry leaves
  • Add onions,green chillies and sauté a minute.
  • Now add turmeric,ginger-garlic paste,coriander powder and sauté a minute till the rawness of ginger-garlic paste disappears
  • Add bottle guard pieces and stir a minute
  • Add salt and close the lid for 10 min in low to medium flame or cook till the bottle guard becomes soft, at this stage add garam masala and cook for 2 more minutes and add warm/hot milk and turn off the stove immediately otherwise the milk gets curdled
