CARROT PORIYAL

INGREDIENTS:

  • Carrots : 4
  • Onion : 1
  • Coconut grated : 2 tbsp
  • Mustard seeds : 1tsp
  • Urad dal : 1 tsp
  • Cumin seeds : 1tsp
  • Oil : 2 tbsp
  • Curry leaves : few
  • Green chillies : 2 (or)
  • Red chilly powder : 2 tsp
  • Salt : as required

PROCEDURE :

  • Grate carrots.you can also chop carrots into small pieces instead of grating.
  • Slice onions and chop green chillies
  • Heat oil in a pan,add mustard seeds,cumin seeds,urad dal .when they splutter add curry leaves
  • Now fry onions till they turn light brown,add turmeric,green chillies and sauté a min
  • Add grated carrot and fry for 5 minutes.now add salt and cook for few more minutes till the carrot is cooked
  • Now add coconut and fry for 2 minutes and turn off the heat
  • Serve hot with rice and any dal
