IVY GUARD/DONDAKAYA FRY

INGREDIENTS:

  • Oil: 1/4 cup
  • Mustard seeds : 1 tea spoon
  • Cumin seeds : 2 tea spoons
  • Urad dal : 1 tables poon
  • Chana dal : 1 tablespoon
  • Asoefetida : a pinch
  • Turmeric : 1/4 teaspoon
  • Red chillies : 3 nos
  • Curry leaves : 1 sprig
  • Onions : 1 medium sized
  • Ivyguard/dondakaya (chopped) : 2 cups
  • Salt : As required

PROCEDURE :

  • Heat oil in a kadai/pan
  • When oil gets heated add mustard seeds, cumin seeds, urad dal, chana dal, asafoetida, red chilies, curry leaves
  • When they splutter, immediately add onions and stir for a minute
  • add turmeric, ivy guard/dondakaya pieces, salt and stir
  • Keep flame in low to medium, close the lid and cook till soft
  • stir occasionally so that it doesn’t get burnt
  • When the pieces are soft and changed to light brown color take off the lid, add red chilly powder
  • stir for a minute and turn off the flame
  • Ivy guard fry is ready, serve hot with rice accompanied by dal/rasam/sambar .​
