EGG FRIED RICE

INGREDIENTS:

  • Eggs: 2
  • cooked Rice : 2 cups
  • Spring onions: 2
  • Oil : 1 tbsp
  • Garlic : 1 tsp(chopped)
  • Carrot( finely chopped) : 1
  • French beans (finely chopped): 4-6
  • Green capsicum (finely chopped) : 1 medium
  • Green peas : handful(optional)
  • Soya sauce : 2 tsp
  • Salt : to taste
  • pepper powder : 1/4 tsp

Method :

  • Heat oil in a wok, add garlic and spring onions and saute for one minute.
  • Add carrot, French beans,green peas and capsicum and continue to sauté for another minute.
  • Add rice and cook on high heat for a minute till the rice gets heated, tossing continuously.
  • Add soy sauce, salt and pepper powder and mix gently.
  • You can add 1 tbsp fried rice masala if you have it ready( I added chings fried rice masala) and fry for 5 mins
  • Transfer into the serving bowl. In the same wok, pour the whisked eggs and lightly scramble .
  • Add the fried rice to this and mix.
  • serve hot, garnished with the spring onion greens.
