NIMMAKAYA PULIHORA

INGREDIENTS :

  • Rice : 2 cups
  • Water : 4 cups
  • Lemon : 2 to 3 nos
  • Mustard seeds : 1 tsp
  • urad dal : 1 tsp
  • Chana dal : 2 tsp
  • Groundnuts : 1 tbsp
  • Cashew nut : 1 tbsp
  • Green chillies : 3
  • Red chillies : 2
  • Salt : as per taste
  • Curry leaves : 10 to 12
  • Hing : 1\4 tsp
  • Oil : 2 tbsp

Method :

  • Wash the rice thoroughly and soak it in water for 15 minutes before cooking.
  • Place water for cooking on a high flame. When it comes to a boil, lower the flame to medium and add in the soaked rice. Allow the rice to cook till it turns tender. Drain out the starch using a strainer.
  • Cover the drained rice and allow it to absorb the remaining moisture and fluff up. After about 5 to 6 minutes, remove the lid and keep aside to cool.
  • Take a Pan and heat 2 table spoons of oil. Add mustard seeds, urad dal, chana dal, ground nuts, cashews and fry in a medium flame until cashews and ground nuts turn into golden brown.
  • Now add Curry leaves, Green chillies and red chillies and stir. Add hing and turmeric powder. Remove it from the flame and add this tempering to the Rice. Mix well by adding salt and lemon juice.
  • nimmakaya pulihora is ready.
