VEGETABLE SAAGU

INGREDIENTS:

  • Mixed Vegetables chopped
  • (carrots+beans+potato+green peas) : 2 cup
  • Oil : 2 tbsp
  • Mustard seeds : 1 tsp
  • Curry leaves : 6
  • To be grinded into paste :
  • Fresh coconut grated :1/4 cup
  • Green chillies : 2
  • Coriander seeds : 2 tsp
  • Cumin seeds : 2 tsp
  • Urad dal : 1 tsp
  • Cinnamon : 1 inch piece
  • Cloves : 2
  • Black pepper corns : 3

PROCEDURE :

  • ​​Heat oil in a pan,add mustard seeds,cumin seeds,curry leaves
  • ​​When they splutter add chopped vegetables, a cup of water,salt and cook with lid closed in low-medium heat till the vegetables are cooked.
  • ​​Meanwhile take another pan and dry roast urad dal first and then add all the ingredients listed under "to be grinded".grind them to a fine paste by adding water as required
  • ​​When the vegetables become soft,add the grounded paste and mix well
  • ​​Cook till gravy comes to boil and switch off the flame
  • ​​Garnish with coriander and serve with poori/dosa/pulao/chapathi.
